Nobody asks whether you believe in insulin. The language of belief has attached itself to ADHD medication, which happens to be among the more heavily tested treatments in medicine, so the useful question is what the testing found.
This is not a way of saying your worries do not count. Side effects, cost, how you feel about giving a child a drug: all of that is real and worth saying out loud. It is only that those are different questions from does it work, and running them together tends to leave you without an answer to any of them.

What the research says
A network meta-analysis pooling randomised trials in children and adolescents found stimulant medication produced the largest symptom reductions of any single intervention, with the non-drug options performing less well on the same measures. That is one kind of outcome measured over the length of a trial, and it is not a claim about a whole life. On the question people actually argue about, though, the evidence is not thin.

A child who barely touches lunch may still eat a normal amount across the day. Look at breakfast and dinner before concluding that they are not eating.
A medicine can help some people and still fail to win approval for a condition. Modafinil is the usual example, cleared for a sleep disorder and short of the bar for attention.
In simulator work the biggest improvements on medication show up in the drivers who were worst without it: stopping properly, slowing for an amber, actually looking around.
