Freezing is not something you decided on. It is what was left once the other options had gone.
A mouse does not try to charm a cat. It runs, and if it is caught it goes limp, and none of that is a considered plan. People ask themselves for years why they did not shout or leave, as though there had been a menu. Try swapping the question 'why did I just freeze' for 'what was actually available to me in that room', and notice how differently the second one lands.

What the research says
A meta analysis of 113 studies of acute stress and memory found that stress helps or harms memory depending on timing and stage, which is why people can remember a crisis vividly and lose track of ordinary details at the same time. Under threat the system reorganises itself without consulting you. That research is about memory rather than about freezing, so it illustrates the point rather than proving it.
